Laser engraving on anodised aluminium removes the anodised layer but doesn't cut a groove deep enough to hold infill reliably. If colour-fill engraving is the required look, brass or aluminium with a rotary process is the better call.

Anodised aluminium's consistency across production runs is one of its underappreciated strengths. Because the colour is a property of the material, not a surface coat, two panels from different batches dyed to the same specification will match very closely.
